For Sunday supper this week, we wanted something quick, fresh and homemade. Everyone has a recipe or two in their back pocket that gets pulled out on occasions like this; here’s one of ours:
Fresh Masala Sauce*
- 2-3 T olive oil
- 1 clove garlic, minced
- Diced mushrooms (The cooking half of Foodie Pleasure would prefer to keep the mushrooms on the large size, but the eating side won’t stand for that…)
- 1 can stewed tomatoes, diced
- 1 tomato, diced
- Red wine
- Fresh basil, julienned
- Salt and pepper
- Unbreaded chicken strips or other meat, if desired
- Fresh mozzarella
*Use all ingredients to taste, depending on portion size desired
Heat olive oil and brown garlic. Add mushrooms. When softened, add all ingredients except cheese and simmer until desired consistency is reached. We like ours saucy! 🙂 Ladle over your favorite pasta, top with fresh mozzarella and enjoy with remaining vino on the side!
The beauty of this simple recipe is that almost anything can be added to it and it will still taste great– try it using your favorite vegetables, with or without meat, using only fresh tomatoes… the possibilities are endless! What’s your go-to dish? Please share!
