Looking for a great Meatless Monday recipe? One of our fall favorites is the Roasted Butternut Squash Soup recipe found on Chow.com (using vegetarian broth instead of chicken, of course!). Though it isn’t exactly quick, it is simple to prepare and delightful to enjoy! Wondering why we like it so much? First of all, we usually have most of the ingredients in our fridge/pantry (minus the sage leaves– but dried sage is an easy swap!). Second, it’s hearty and filling without being overwhelmingly heavy. Third, it’s a great excuse to get out the stock pot and immersion blender. We finally got rid of our old ones so we love to use the new gear! Last but not least, it heats up well which makes for the perfect lunch at work.
