On chilly winter weekend mornings, we like to change up our breakfast routine a bit. One of our favorite treats is Pannukakku, or Finnish Oven Pancakes. Kristina was an exchange student in Finland during high school and this is one of the recipes she picked up.
Pannukakku: Finnish Oven Pancakes
- 4 T. butter, cut into 4 pieces
- 4 eggs
- 1 c. flour
- 1 c. milk
- Pinch of salt
- 1-4 T. sugar, optional
- Preheat oven to 400 degrees. When oven reaches approximately 300 degrees, place a 9 in. cake pan with butter inside. Allow butter to melt but not brown.
- Place remaining ingredients in a blender and blend. Pour into pan while it’s still in the oven.
- Bake for 30-40 minutes and serve immediately.
One tip: consider placing a cookie sheet underneath the cake pan in case it goes over.
