With the Super Bowl in two days, we’re sure both NFL and casual fans have plans to cheer, drink and eat! One popular item eaten on Super Bowl Sundays is buffalo wings. Over a billion wings are consumed on game day. If you need a last minute recipe for buffalo wings, consider this one from Dan Rooney’s at Empire City Casino.
- Wings joints anf flats: 7each
- Cumin: 1/2 tbs
- Dark Chili Powder: 1/2 tbs
- Paprika: 1/2 tbs
- Onion Powder: 1/2 tbs
- Garlic Powder: 3 tbs
- Cayenne Pepper: 1/2 tbs, grounded
- Salt & Pepper: To taste
Directions: Combine the spices (reserving 1 tbs of garlic powder for post-cooking seasoning) and toss with the wings to coat. Bake for 35 minutes in 350-degree oven. Fry wings until crispy and golden brown, drain and toss with garlic infused olive-oil and remaining garlic powder. Whether the Patriots or Eagles win, you’ll win with these wings!

FP: Share with us a day in the life as a Chef at Dan Rooney’s.
RK: When I come in I check emails, review the previous day sales and nightly manager’s report, and do a walkthrough of the restaurant. Then it’s time to prep the kitchen and greet our employees. Also, I make sure all of our equipment is working properly and that there are no kitchen issues that have to be addressed. Next up, it’s time to place transfers and food purchase orders, make sure the weekly specials are ready for service, review upcoming events with the sales team and the casino’s Executive Chef, and brief the Sous Chefs before service.
FP: Besides Dan Rooney’s, where are some of your favorite places to eat in Westchester?
FP: We’ve been to Little Mexican Cafe and will have to check out Ripe. What are some of your guilty pleasures? We call them foodie pleasures, hence the name of our blog!
RK: The Ice Cream Factory in Mt. Vernon! I love going there to have a freshly made waffle cone with strawberry ice cream, strawberry topping and whipped cream.
FP: Can’t go wrong with ice cream! If you could get on a plane tomorrow and visit any place just for its food, where would it be?
FP: If you weren’t a chef, what would you be doing? What are some of your non-cooking interests and hobbies?
RK: If I weren’t a chef, I would definitely be an Electrician.
FP: What is the one item in the kitchen you can’t live without?
FP: What is the best cooking advice you’ve received?
RK: Cook from the heart and always cook with love.
